Metro University’s Eco-Friendly Seafood Journey

At Metro University, our commitment to sustainability doesn't stop at the shoreline—it dives deep into the waters that feed us. With growing awareness of the environmental impacts of fishing and aquaculture, the university has launched a groundbreaking initiative to ensure that the seafood served on campus is both delicious and responsibly sourced.

A Sea Change in Dining

The Sustainable Seafood Initiative (SSI), spearheaded by Metro University's Dining Services in collaboration with the Environmental Studies Department, has reshaped the way the campus approaches seafood. By partnering with certified suppliers and adhering to global sustainability standards, the program ensures that every piece of seafood served on campus meets strict environmental criteria.


“We’re committed to supporting fisheries and farms that prioritize the health of our oceans and the well-being of marine ecosystems,” says Dr. Lisa Hernandez, a professor of marine biology and one of the initiative’s advisors. “This program is about making choices today that will sustain our planet for generations to come.”


How It Works

The SSI focuses on three core principles:



  1. Sourcing Responsibly: Metro University exclusively partners with suppliers certified by organizations such as the Marine Stewardship Council (MSC) and the Aquaculture Stewardship Council (ASC). This ensures that the seafood is harvested or farmed in ways that minimize environmental impact and support ethical labor practices.
  2. Education and Awareness: The university hosts workshops, cooking demonstrations, and guest lectures to educate students and staff about sustainable seafood. These events highlight the importance of making informed choices as consumers.
  3. Reducing Waste: Dining Services has implemented strategies to minimize food waste, including creative menu planning that utilizes the entire fish and composting programs that keep scraps out of landfills.

A Menu to Remember

Thanks to the initiative, students can now enjoy dishes like responsibly farmed shrimp tacos, wild-caught Alaskan salmon, and plant-based seafood alternatives that mimic the taste and texture of traditional favorites.

“This isn’t just about seafood,” says Dr. Hernandez. “It’s about showing students that every choice they make—whether it’s the food they eat, the energy they use, or the waste they produce—can contribute to a healthier planet.”
